How We Built Chibog: A Filipino Food Journey From Heart to Home

If you told us five years ago that we’d be running a bustling Filipino restaurant in the heart of Melbourne, we probably would have laughed, shrugged, and said something like, “Sige, sure — one day!” But here we are — proud founders of Chibog, a place that’s become more than just a restaurant. It’s our love letter to the flavours we grew up with, the community we adore, and the dream we chased even when it felt impossible.
The story of Chibog isn’t one that starts with investors, big plans, or fancy consultants. It starts around a kitchen table — our kitchen table — surrounded by the sound of a sizzling kawali, the sweet smell of ube desserts cooling on the bench, and friends relentlessly asking, “Why don’t you open a restaurant already?” We used to brush it off as just a compliment… but eventually, all those voices turned into a calling we couldn’t ignore.
Finding the Courage (and the Right Location)
Starting a business is one thing. Starting a restaurant — a Filipino one — in a city where adobo still needs a bit of explaining? That’s a whole new level of guts.
We must’ve looked at a dozen spaces before we found the one. It wasn’t perfect — old tiles, strange colour scheme, and the kind of lighting that made everything look slightly green. But it had charm. It had potential. And most importantly, it felt like home to us.
We stood inside that empty building and envisioned a future:
- Long tables filled with laughter
- Plates of crispy pata disappearing in seconds
- People hearing OPM classics and feeling just a little bit nostalgic
- Newcomers taking their first bite of lumpia and instantly becoming fans
It was that vision that made us sign the lease, even though our hands were shaking.
Renovating With Heart (and No Design Degree)
Designing the space was an adventure. We didn’t want anything too trendy or sterile — we wanted Chibog to feel like walking into a Filipino household before a fiesta: colourful, warm, welcoming, and proudly Pinoy.
But renovations aren’t cheap (shocking, right?). Every dollar had to stretch. We painted walls ourselves, begged cousins to help install shelving, and spent late nights browsing Facebook Marketplace for furniture that didn’t look like it belonged in a 90s diner.
One small yet surprisingly significant part? The windows. The harsh sun would pour in during lunch service, and the glare was a pain for customers trying to enjoy their halo-halo. We discovered My Direct Blinds — an online store where we could order custom window furnishings without blowing our entire fit-out budget. We installed the blinds ourselves, and honestly… we still brag about how easy it was. They instantly made the space feel finished — polished yet still homey. Sometimes it’s the little things that make the biggest difference.
Taste Testing: The Most Fun Part
Coming up with the menu was pure joy. Sure, we had our non-negotiables: adobo, pancit, halo-halo, lechon kawali. But how we presented them? That was new territory.
We invited friends over constantly, serving dish after dish like unofficial food critics. We tested sauces, debated over how garlicky was too garlicky, and spent weeks perfecting our crispy pata because it must always be crunchy — always.
Our food isn’t fine dining, and that’s intentional. We’re serving the flavours that raised us — bold, comforting, saucy, crispy, loud. Food that unapologetically demands a big appetite.
The Emotional Rollercoaster of Opening Day
When launch day finally arrived, we didn’t sleep. Not even a minute. We kept checking bookings, rearranging tables, re-printing menus because we found a typo, wiping down surfaces that were already spotless… and praying people would show up.
They did.
From the moment we unlocked the doors, it was chaos — the best kind. Orders flying in, kitchen heat steaming up our brand-new blinds, Tagalog and English bouncing around the room. Our cheeks hurt from smiling.
Some customers cried. We did too. It was overwhelming to see Filipino families finally get a place of representation — a restaurant that didn’t treat Filipino food like an afterthought.
Community: The Heart of Chibog
Filipinos don’t dine — they gather. They fill a table like they’re filling a story — everyone has something to add.
We noticed quickly that Chibog wasn’t just a business. It became:
- A meeting point for newly arrived kababayans
- A nostalgia fix for second-gen Filipinos hungry for heritage
- A party spot for baptisms, birthdays, and reunions
- A bridge for Aussies curious about our cuisine
Every week, we meet someone who says, “I haven’t tasted food like this since I left the Philippines.” That alone makes every hard moment worth it.
The Challenges We Didn’t See Coming
We expected long hours — but maybe not this long. We expected stress — but not the kind that keeps you awake doing mental rice stock calculations. We expected to learn — we just didn’t expect to learn so much, so quickly.
Equipment breaks. Staffing is hard. Ordering the wrong brand of vinegar? Disaster.
But every challenge has taught us to be better — better leaders, better cooks, better listeners. And at the end of each emotional shift, we look around our dining room and see what we built — together — from the ground up.
Why Filipino Food Matters
Filipino cuisine deserves a global stage. For too long, it’s been underrated — hidden behind more popular Asian cuisines. But Filipino food is rich with history, culture, and personality.
Where else do you find flavours influenced by:
- Spanish stews
- Chinese noodles
- Malay spices
- American sweetness
…all blended into something uniquely ours? We’re proud to be part of a new wave of Filipino restaurateurs giving our food the spotlight it deserves.
Small Wins That Feel Huge
Sometimes success looks like a packed Saturday night. Other times, it looks like:
- A perfect batch of leche flan
- A curious Aussie trying sisig for the first time and loving it
- A customer saying “this tastes like my lola’s”
- Our DIY blinds surviving another busy lunch rush
- Staff eating together after a crazy dinner service
Looking Ahead
Chibog is still growing. We want to expand the menu, host more cultural events, maybe one day open a second location — who knows?
But we’ve learned not to rush the journey. Every service, every plate, every customer adds to the story we’re telling. And that story is simple: we’re here to feed people, bring joy, and share the Philippines, one spoonful at a time.
